Heat oil in a large skillet over medium heat. Add onions, season with salt if desired and cook, stirring occasionally, 12 minutes or until onions are caramelized. Stir in curry powder and garlic and cook 30 seconds. Add chickpeas, coconut milk and vegetable stock bring to a boil over high heat. Add Green Giant® Veggie Spirals® Sweet Potato ‘Rotini’ reduce heat and simmer 5 minutes. Stir in spinach and cook 1 minute or until wilted.
