Ingredients

- 1 Tbsp. olive oil
- 4 large chicken tenders
- salt and pepper, to taste
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- 1 cup grated parmesan cheese, divided
- cooking spray
- 1/2 cup marinara sauce
- 4 thick slices mozzarella cheese
- 1 package Green Giant ® Zucchini Tots – Parmesan Cheese
- 2 cups multi-colored cherry tomatoes
- 1 Tbsp. olive oil
- 1/2 tsp. garlic powder
Directions
- Preheat oven to 450°F. Lightly oil a sheet pan with olive oil (or spray with cooking spray) and place in the oven.
- Season chicken tenders all over with salt and pepper.
- In a shallow bowl, whisk the egg until homogenous. In a separate bowl, combine panko, ½ cup of the grated parmesan and a pinch of salt.
- Working with one tender at a time, dip in egg, then coat in panko mixture and set on a plate or baking sheet.
- In a small bowl, toss tomatoes in olive oil and sprinkle with garlic powder, salt and pepper.
- Carefully remove hot sheet pan from oven and set chicken tenders in the center of the baking sheet.
- Scatter zucchini tots on one side of the baking sheet and seasoned tomatoes on the other side of the sheet. Lightly spray tenders, Zucchini Tots and tomatoes with cooking spray.
- Bake for about 10 minutes. Flip tenders and Zucchini Tots and bake another 10 minutes. Check to see if chicken is done, if not, bake for another 2-4 minutes, checking after 2 minutes.
- Top each chicken tender with 2 tablespoons marinara sauce and a slice of mozzarella. Sprinkle tots and tomatoes with remaining ½ cup grated parmesan and place the sheet pan under the broiler for 1-2 minutes until cheese is melted.
- Plate each chicken tender with Zucchini Tots and roasted tomatoes.
