Ingredients

- 1 package Green Giant® Riced Veggies Cauliflower
- 1lb shredded cooked chicken (about 2 cups)
- 1 Tbsp. ranch seasoning
- 1/2 cup Greek yogurt
- 4 ounces regular or light cream cheese
- 1/3 cup buffalo hot sauce
- 1 1/4 cups shredded cheddar cheese, divided
- 1 package Green Giant® Veggie Tots® Broccoli & Cheese
- additional buffalo sauce, for serving
- ranch dressing, for serving
- 1/3 cup chopped green onions, for serving
Directions
- Preheat oven to 375°F. Spray a 4-cup casserole with cooking spray.
- Prepare Riced Veggies Cauliflower according to pack instructions.
- Pour Riced Veggies into a large bowl and add chicken.
- In a separate bowl, whisk together ranch seasoning, Greek yogurt, cream cheese and buffalo sauce until smooth – mixture may be lumpy
- Pour sauce over chicken and Riced Veggies and mix until well combined.
- Spread mixture in prepared casserole and top with 1 cup of the shredded cheddar cheese.
- Cover casserole with foil and bake for 25 minutes.
- While casserole is baking, air fry Veggie Tots according to pack instructions until crispy and golden brown. Note: Veggie Tots and the casserole should finish cooking at just about the same time.
- Remove casserole from oven and top with cooked tots and remaining ¼ cup of cheddar cheese.
- Return to oven and bake for another 5 minutes.
- To serve, drizzle with ranch dressing and buffalo sauce and sprinkle with green onions.
