Veggie Cheese Soup Recipe

A creamy, cheesy and comforting soup to please the whole family. Psst – it’s full of veggies, too!

INGREDIENTS

1/4 cup butter
1/4 cup finely chopped onion*
1/4 cup flour
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/4 teaspoon garlic powder
2 cups vegetable or chicken broth
1/2 teaspoon Dijon mustard
1 pkg Green Giant® Simply Steam™ Broccoli, Carrots, Cauliflower & Cheese Sauce
3/4 cup half & half
3/4 cup 2% or whole milk
1 1/2 cups (6oz) grated sharp cheddar cheese, plus more for servings**
Pinch of cayenne, optional

DIRECTIONS

Microwave Green Giant Vegetables according to pack instructions.
Meanwhile melt butter in a large pot. Add onions and saute until tender, 2-3 minutes.
Sprinkle flour over butter and onions and cook, whisking constantly, for 1 minute.
Whisk in salt, pepper and garlic powder.
Gradually whisk in vegetables or chicken broth and Dijon until smooth. Bring to a boil, reduce heat and simmer.
Add Green Giant Vegetables to soup and continue simmering for 10 minutes.
Whisk in half and hald and milk and bring back to a simmer
Gradually whisk in shredded cheese and remove from heat.
Adjust seasoning.
Pour into warm bowls and garnish with shredded cheese.


Tips: 

*can substitute 1/2 tsp onion powder
**freshly grated cheese works much better than pre-shredded bagged cheese
