2 tablespoons butter
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 stalk celery, diced (about 1/2 cup)
1 carrot, diced (about 1/2 cup)
1/2 cup diced red onion
1 clove garlic, chopped
4 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (12 oz.) package Green Giant® Veggie Spirals® Zucchini, cooked according to package directions and drained
1/4 cup chopped fresh parsley
Heat butter in 4-quart saucepan over medium heat. Add chicken and cook, stirring occasionally, 5 minutes or until beginning to brown.
Add celery, carrot, onion, and garlic and cook 5 minutes or until vegetables are softened.
Add broth, salt and pepper and simmer 10 minutes. Stir in Green Giant® Veggie Spirals® Zucchini and parsley and cook 1 minute or until heated through.
