Cauliflower Totchos Recipe

You won’t have any problem getting kids (or adults) to eat their veggies when you whip up some Totchos. Like traditional nachos except the base is loaded with better-for-you Cauliflower Veggie Tots. Perfect for a fun weeknight dinner, entertaining or a hearty snack.

1 (14-ounce) package Green Giant® Veggie Tots®
1/2 lb. ground beef
1 (16-ounce) jar Ortega Salsa, divided
1 cup black beans, drained
2 cups Mexican blend cheese
Toppings of your choice:
1/2 cup sour cream
3-4 green onions, sliced
1/2 cup sliced black olives
1-2 jalapeños, seeded and sliced
1 avocado, peeled and sliced or mashed
1/4 cup chopped cilantro
fresh lime wedges


Bake or Air-Fry Veggie Tots according to pack instructions.
Preheat oven to 425°F and spray a baking sheet with cooking spray.
Brown ground beef in large skillet and drain. Stir in 1 cup of the salsa and black beans cook for 3 minutes or until heated through.
Arrange cooked Veggie Tots on baking sheet and top with ground beef and shredded cheese.
Bake for 6- 8 minutes until cheese has melted.
Serve with remaining salsa and toppings of your choice.
