Warm Pesto Grain Bowl Recipe

1 cup multicolored cherry tomatoes

1 Tbsp. olive oil

salt and freshly ground pepper

1 pkg Green Giant® Restaurant Style Veggies & Rice – Spring Veggies, Brown Rice & Quinoa

2 cups packed baby spinach

½ cup premade pesto, divided

1 avocado, seeded, peeled and cubed

½ cup toasted pine nuts

½ cup grated parmesan, to serve


Preheat oven to 400°F. Spread tomatoes on baking sheet, drizzle with olive oil and sprinkle with salt and pepper, then roast for 10 minutes. Remove from oven and toss with 1 Tbsp. pesto.

Meanwhile, prepare Green Giant Veggies & Rice according to instructions on pack.

To assemble, divide fresh spinach between two serving bowls and toss each with 1 Tbsp. pesto.

Top with Green Giant Veggies & Rice, followed by roasted tomatoes, avocado, pine nuts and parmesan.

Serve with remaining pesto
