Microwave Veggie Spirals Butternut Squash for 5-6 minutes until hot. Place in a colander, run under cold water to stop the cooking, then allow any excess liquid to drain. Set aside.
Cook bacon in a large non-stick skillet until browned and cooked through.
Add garlic and sauté for another minute.
Add half & half and cook, stirring often, until sauce thickens a bit, about 2 minutes.
Meanwhile, whisk together egg, grated parmesan, salt and pepper in a small bowl.
When half & half mixture has thickened, add egg mixture and butternut spirals, stirring for 2 minutes or until warmed through. Add another splash of half & half if too thick.
Remove from heat and adjust seasoning. Divide between two bowls and top with chopped parsley, red pepper flakes and more parmesan.
