  1. Preheat oven to 400°F. Spread tomatoes on baking sheet, drizzle with olive oil and sprinkle with salt and pepper, then roast for 10 minutes. Remove from oven and toss with 1 Tbsp. pesto.
  2. Meanwhile, prepare Green Giant Veggies & Rice according to instructions on pack.
  3. To assemble, divide fresh spinach between two serving bowls and toss each with 1 Tbsp. pesto.
  4. Top with Green Giant Veggies & Rice, followed by roasted tomatoes, avocado, pine nuts and parmesan.
  5. Serve with remaining pesto
