Spinach and Sausage Gnocchi

Ingredients

  • 1 lb. ground Italian sausage
  • 3 cloves garlic, minced
  • ½ C. chicken or vegetable broth
  • 1 – 15 oz. can diced tomatoes with Italian seasonings, undrained*
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 lb. gnocchi (shelf-stable)
  • 1 ¼ C. shredded parmesan cheese, divided
  • 2 Tbsp. heavy cream
  • 1 8 oz. pkg. Green Giant® Chopped Spinach

Directions

  1. In a large skillet over medium heat, cook the sausage, breaking it up as it cooks until it’s mostly browned.
  2. Add the minced garlic and cook while stirring for 30 seconds.
  3. Add the broth, tomatoes, salt and pepper and stir to combine.
  4. Add the gnocchi and stir.
  5. Turn the heat down to med-low to maintain a simmer.
  6. Cook for about 5 minutes or until the gnocchi is cooked through.
  7. While the gnocchi is cooking, heat the spinach according to package directions. Set aside when done.
  8. Add ¾ C. of the parmesan cheese, cream and spinach to the skillet and stir until the cheese is melted and the mixture starts to simmer again.
  9. Serve with reserved parmesan cheese.

 

*if using plain diced tomatoes, add 1-2 tsp. Italian seasoning
