Ingredients

- 1 lb. ground Italian sausage
- 3 cloves garlic, minced
- ½ C. chicken or vegetable broth
- 1 – 15 oz. can diced tomatoes with Italian seasonings, undrained*
- ½ tsp. salt
- ¼ tsp. black pepper
- 1 lb. gnocchi (shelf-stable)
- 1 ¼ C. shredded parmesan cheese, divided
- 2 Tbsp. heavy cream
- 1 8 oz. pkg. Green Giant® Chopped Spinach
Directions
- In a large skillet over medium heat, cook the sausage, breaking it up as it cooks until it’s mostly browned.
- Add the minced garlic and cook while stirring for 30 seconds.
- Add the broth, tomatoes, salt and pepper and stir to combine.
- Add the gnocchi and stir.
- Turn the heat down to med-low to maintain a simmer.
- Cook for about 5 minutes or until the gnocchi is cooked through.
- While the gnocchi is cooking, heat the spinach according to package directions. Set aside when done.
- Add ¾ C. of the parmesan cheese, cream and spinach to the skillet and stir until the cheese is melted and the mixture starts to simmer again.
- Serve with reserved parmesan cheese.
*if using plain diced tomatoes, add 1-2 tsp. Italian seasoning
