Minestrone Soup

Ingredients

  • 1 can cannellini beans, drained
  • 1 can Italian style chopped tomatoes, undrained
  • 1 quart vegetable broth
  • 1/2 tsp. onion powder
  • 1 tsp. dried oregano. 1 tsp. kosher salt
  • 1/4 tsp. red pepper flakes
  • 1 cup elbow macaroni
  • 1 pkg. Green Giant® Simply Steam™ Garlic & Herb Vegetable Medley
  • 1/4 – 1/2 cup grated parmesan, for serving
  • 2 Tbsp. chopped fresh basil, for serving (optional)

Directions

  1. In a medium soup pot or large saucepan, combine drained beans, undrained chopped tomatoes, vegetable broth, onion powder, oregano, salt, pepper and red pepper flakes.
  2. Bring to a boil over medium-high heat.
  3. Add pasta and Simply Steam Vegetable Medley.
  4. Cover and simmer over medium-low heat for 7-9 minutes or until pasta is al dente.
  5. Ladle into 4 warm bowls and top with grated parmesan and chopped basil, if desired
