Mediterranean Riced Cauliflower Recipe

Deeps flavors from simple ingredients. Mrs. Dash kicks this Mediterranean style dish up a notch.

INGREDIENTS

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, chopped

1 (10-ounce) package Green Giant® Riced Veggies Cauliflower, thawed and drained

2 to 3 teaspoons Mrs. Dash® Original Blend

1/3 cup chopped artichoke hearts

1/3 cup sundried tomatoes

2 tablespoons chopped fresh oregano

2 tablespoons crumbled feta cheese

DIRECTIONS

Heat olive oil in large nonstick skillet over medium-high heat and cook onion 4 minutes or until softened and beginning to brown. Add garlic and cook 1 minute.

Stir in Green Giant® Riced Cauliflower and Mrs. Dash® Original Blend cook 4 minutes, stirring occasionally, or until vegetables are tender. Stir in artichoke hearts, sundried tomatoes and cook 2 minutes.

Stir in oregano and top with feta cheese.

Sprinkle with additional Mrs. Dash, if desired.
