Ingredients

- 1 package Green Giant® Veggie Spirals® Zucchini
- 2/3 cup vegetable oil
- 3/4 cup light or dark brown sugar
- 1/4 cup granulated sugar
- 2 tsp. vanilla extract
- 2 large eggs.
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. soda
- 1/2 tsp. baking powder
- 2 cups all-purpose flour
- 1 cup semisweet or bittersweet chocolate chips, optional
- 3 Tbsp. coarse (turbinado) sugar
Directions
- Preheat oven to 350°F. Spray a 9-inch loaf pan with cooking spray or grease with butter.
- Microwave Veggie Spirals according to pack instructions.
- Carefully open bag and pour spirals into a colander. Use kitchen shears to cut spirals into pieces.
- In a large bowl, whisk together vegetable oil, brown sugar, granulated sugar and vanilla until smooth.
- Whisk in eggs, beating well.
- Stir in zucchini spirals.
- In a separate bowl, whisk together salt, cinnamon, baking soda, baking powder and flour.
- Add dry mixture to zucchini mixture and stir until combined.
- Stir in chocolate chips, if using.
- Spread batter into prepared pan and sprinkle top with coarse sugar.
- Bake for 50-60 minutes or until a tester inserted in the center of the loaf comes out clean.
- Cool for 5 minutes and remove from pan.
