1 package Green Giant® Veggie Spirals® Zucchini
2/3 cup vegetable oil
3/4 cup light or dark brown sugar
1/4 cup granulated sugar
2 tsp. vanilla extract
2 large eggs
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. soda
1/2 tsp. baking powder
2 cups all-purpose flour
1 cup semisweet or bittersweet chocolate chips, optional
3 Tbsp. coarse (turbinado) sugar
Preheat oven to 350°F. Spray a 9-inch loaf pan with cooking spray or grease with butter.
Microwave Veggie Spirals according to pack instructions.
Carefully open bag and pour spirals into a colander. Use kitchen shears to cut spirals into pieces.
In a large bowl, whisk together vegetable oil, brown sugar, granulated sugar and vanilla until smooth.
Whisk in eggs, beating well.
Stir in zucchini spirals.
In a separate bowl, whisk together salt, cinnamon, baking soda, baking powder and flour.
Add dry mixture to zucchini mixture and stir until combined.
Stir in chocolate chips, if using.
Spread batter into prepared pan and sprinkle top with coarse sugar.
Bake for 50-60 minutes or until a tester inserted in the center of the loaf comes out clean.
Cool for 5 minutes and remove from pan.
