Cheesy Spinach Pull Apart Bread

  1. Preheat oven to 350°F and line a baking sheet with parchment paper or spray with nonstick spray; set aside.
  2. Prepare the spinach as directed on the package. When done, remove it from the pouch and place it in a colander to drain.
  3. Using a bread knife, make cuts about 1 ½ inches apart from end to end without cutting all the way through the bread. Repeat this process and make the cuts perpendicular.
  4. In a microwave-safe bowl, combine 6 tablespoons of butter, 2 teaspoons of garlic powder and 1 tablespoon of parsley. Microwave in 30 second increments until the butter is melted.
  5. Pour the butter mixture over the sliced bread a little at a time, pulling the cuts open so the butter can drip down inside the bread.
  6. Over medium heat, melt the remaining 3 tablespoons of butter in a saucepan.
  7. Using the back of a spoon, press out any remaining excess liquid from the spinach. Then place the spinach in the pan with the melted butter.
  8. Add the remaining 1 teaspoon of garlic powder.
  9. Stir to mix and cook until hot.
  10. Remove from the heat and stir in both cheeses.
  11. Stuff the spinach filling into the bread, pressing in between the cuts.
  12. Place the bread on the prepared baking sheet and loosely cover with foil.
  13. Bake for 30 minutes.
  14. Remove the foil and bake an additional 5-10 minutes or until the cheese is melty and the bread is golden. Sprinkle with red pepper flakes, if desired.
  15. Serve immediately.
