Ingredients
- 1 package Green Giant Broccoli and Cheese Sauce
- 6 large eggs
- ¼ cup milk
- ½ cup red peppers, diced
- 3 oz goat cheese, crumbled
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ½ tsp olive oil (for greasing)
Directions
- Heat your oven to 350°F. Grease a 12-cup muffin tin with olive oil.
- Cook the Green Giant Broccoli and Cheese Sauce according to package directions. Let cool slightly.
- Dice the red peppers into small pieces.
- Whisk together the eggs, milk, salt, pepper, and garlic powder in a bowl until smooth.
- Divide the broccoli and red peppers evenly among the muffin cups.
- Pour the egg mixture over the veggies, filling each cup about ¾ full.
- Sprinkle crumbled goat cheese on top.
- Place the muffin tin in the oven and bake for 18-22 minutes, or until the egg bites are set and slightly golden on top.
- Let the egg bites cool for a few minutes before removing from the tin. Enjoy warm or store in the fridge for up to 5 days. Reheat in the microwave for 20-30 seconds.
