Brocfast Bites
Broccoli, goat cheese, red pepper and egg bites

Ingredients

  • 1 package Green Giant Broccoli and Cheese Sauce
  • 6 large eggs
  • ¼ cup milk
  • ½ cup red peppers, diced
  • 3 oz goat cheese, crumbled
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ½ tsp olive oil (for greasing)

Directions

  1. Heat your oven to 350°F. Grease a 12-cup muffin tin with olive oil.
  2. Cook the Green Giant Broccoli and Cheese Sauce according to package directions. Let cool slightly.
  3. Dice the red peppers into small pieces.
  4. Whisk together the eggs, milk, salt, pepper, and garlic powder in a bowl until smooth.
  5. Divide the broccoli and red peppers evenly among the muffin cups.
  6. Pour the egg mixture over the veggies, filling each cup about ¾ full.
  7. Sprinkle crumbled goat cheese on top.
  8. Place the muffin tin in the oven and bake for 18-22 minutes, or until the egg bites are set and slightly golden on top.
  9. Let the egg bites cool for a few minutes before removing from the tin. Enjoy warm or store in the fridge for up to 5 days. Reheat in the microwave for 20-30 seconds.
