Big Batch Crispy Masher Patties Recipe

1 (20 oz.) pkg. Mashed Cauliflower
2 eggs
1 cup panko
1 cup Parmesan cheese
1/2 tsp. freshly ground pepper
sour cream and chopped fresh chives, for serving


Preheat oven to 400°F. Line two baking sheets with aluminum foil and spray well with cooking spray.
Prepare Mashed Cauliflower as directed on pack.
Let stand for 10 minutes to cool.
In a medium bowl, whisk eggs.
Add panko, Parmesan, pepper and Mashed Cauliflower, stirring to combine.
Drop mixture by rounded tablespoons onto prepared baking sheets, using the spoon to form mixture into 24 round patties.
Spray lightly with cooking spray.
Bake for 12 minutes, remove pans from oven and carefully flip each patty.
Return pans to oven and bake for another 10 minutes.
Transfer patties to a serving platter and serve with sour cream and minced chives.
Note: For extra cheesy mashers, add 1 cup mozzarella to batter before dropping onto baking sheet.
