Crispy Masher Patties Recipe

These crispy, creamy, tasty little patties can be served as an appetizer, afternoon snack or side dish.

INGREDIENTS

1 (10 oz.) pkg. Mashed Cauliflower
1 egg
1/2 cup panko
1/2 cup Parmesan cheese
1/4 tsp. freshly ground pepper
sour cream and chopped fresh chives, for serving

DIRECTIONS

Preheat oven to 350°F. Line a baking sheet with aluminum foil and spray well with cooking spray.
Prepare Mashed Cauliflower as directed on pack.
Let stand for 10 minutes to cool.
In a medium bowl, whisk egg.
Add panko, Parmesan, pepper and Mashed Cauliflower, stirring to combine.
Drop mixture by rounded tablespoons onto prepared baking sheet, using the spoon to form mixture into 12 round patties.
Spray lightly with cooking spray.
Bake for 12 minutes, remove pan from oven and carefully flip each patty.
Return to oven and bake for another 10 minutes.
Transfer patties to a serving platter and serve with sour cream and minced chives.
Note: For extra cheesy mashers, add ½ cup mozzarella to batter before dropping onto baking sheet.
