  1. Preheat oven to 350°F.
  2. In large skillet, heat oil and cook sausage, onion and pepper for 10 minutes or until vegetables are softened and sausage is beginning to brown. Remove from heat and turn into a 2-quart baking dish. Let cool slightly.
  3. Whisk eggs and milk together, season with salt and pepper. Sprinkle cheese over sausage mixture then pour eggs over mixture. Arrange Veggie Tots evenly over egg mixture.
  4. Bake 45 minutes or until set and top is golden brown. Let stand 10 minutes before serving.
