Ingredients

- 2 tablespoons olive oil
- 1 small onion, chopped
- 1/2 pound corned beef, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (12-ounce) package Green Giant® Riced Veggies Cauliflower & Sweet Potato
- 1 teaspoon mustard (optional)
- 4 eggs, fried or poached
Directions
- Heat olive oil in large nonstick skillet over medium-high heat and cook onion 3 minutes or until softened. Add corned beef, green pepper and garlic and cook 2 minutes.
- Stir in Riced Veggies and mustard and cook 5 minutes, stirring occasionally, or until hot. Serve eggs over hash.
