Vegetable Latkes

  1. Prepare the veggies according to the package directions.
  2. When done, pour vegetables into a medium bowl.
  3. Use a large fork to mash the vegetables with the focus being on mashing the potatoes.
  4. To the vegetables, add the beaten egg, flour and dill.
  5. Stir until well blended.
  6. In a large skillet, heat enough shortening to have ¼-inch deep oil when melted.
  7. Heat over medium-high heat to around 350-360°F.
  8. Scoop out approximately 2 tablespoons of veggie mixture and place it in the skillet.
  9. Use a spatula to gently press the mixture down to about 1/4 -inch thick.
  10. Add more latkes to the skillet, but do not overcrowd.
  11. Cook each for 2-3 minutes per side or until golden brown and crispy.
  12. Drain on a paper towel.
  13. Serve with sour cream and green onions.
