1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
1 small onion, chopped
2 cloves garlic, chopped
2 1/2 cups chicken broth
3 cups broccoli florets
Heat olive oil in large skillet over medium heat and brown chicken; remove and keep warm.
Add onion and cook 5 minutes. Add garlic and cook 30 seconds.
Add chicken broth and Green Giant® Riced Veggies Chickpea Cauliflower Blend and bring to a boil over high heat. Arrange broccoli and chicken on top of Riced Veggies. Simmer 9 minutes or until Riced Veggies are tender.
Sprinkle with Parmesan cheese if desired.
