One Skillet Chicken, Broccoli & Riced Veggies

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 1/2 cups chicken broth
  • 3 cups broccoli florets
  • 1 package Green Giant® Riced Cauliflower

Directions

  1. Heat olive oil in large skillet over medium heat and brown chicken; remove and keep warm.
  2. Add onion and cook 5 minutes. Add garlic and cook 30 seconds.
  3. Add chicken broth and Green Giant® Riced Cauliflower and bring to a boil over high heat. Arrange broccoli and chicken on top of Riced Veggies.   Simmer 9 minutes or until Riced Veggies are tender.
  4. Sprinkle with Parmesan cheese if desired.
