Minestrone Soup Recipe

This hearty, vegetable-filled soup is the perfect antidote to a chilly day

1 can cannellini beans, drained
1 can Italian style chopped tomatoes, undrained
1 quart vegetable broth
1/2 tsp. onion powder
1 tsp. dried oregano. 1 tsp. kosher salt
1/4 tsp. red pepper flakes
1 cup elbow macaroni
1 pkg. Green Giant® Simply Steam™ Garlic & Herb Vegetable Medley
1/4 – 1/2 cup grated parmesan, for serving
2 Tbsp. chopped fresh basil, for serving (optional)


In a medium soup pot or large saucepan, combine drained beans, undrained chopped tomatoes, vegetable broth, onion powder, oregano, salt, pepper and red pepper flakes.
Bring to a boil over medium-high heat.
Add pasta and Simply Steam Vegetable Medley.
Cover and simmer over medium-low heat for 7-9 minutes or until pasta is al dente.
Ladle into 4 warm bowls and top with grated parmesan and chopped basil, if desired
