Easy one pot skillet dinner perfect for busy weeknights when you crave something comforting with the taste of French onion soup.
4 thin-sliced chicken breasts (about 1-1/4 lbs.)
1 tablespoon olive oil
1 large sweet onion, sliced
1 package Green Giant® Marinated Mushrooms, thawed but not drained
1/2 cup chicken broth
4 slices Swiss cheese (about 2 oz.)
1 tablespoon chopped fresh thyme (optional)
Season chicken with salt and pepper. Heat oil in large nonstick skillet over medium heat and
brown chicken on both sides. Remove and set aside.
Add onion, season with salt if desired, and cook 10 minutes, stirring occasionally or until
onions are very tender. Add mushrooms and chicken broth and bring to a boil.
Return chicken to skillet, simmer 3 minutes or until chicken is cooked and vegetables are hot.
Top each chicken breast with piece of cheese. Cover and cook 2 minutes or until cheese is
melted. Garnish with fresh thyme.
