Fiesta Nacho Stacks Recipe

Kids will never know there’s a serving of veggies in these zippy snacks. Keto-friendly, too!

1 pkg. Green Giant® Cilantro Lime Riced Veggie Blends
2 eggs
1 1/2 cups Mexican blend shredded cheese
1/4 tsp. salt
For serving:
1 can black beans, drained
1 cup Mexican blend shredded cheese
Toppings: sour cream, sliced green onions, shredded lettuce, salsa or pico de gallo, sliced avocado


Prepare Cilantro Lime Riced Veggie Blends as directed on pack. Meanwhile whisk eggs in a medium bowl and add 1 ½ cups shredded cheese and salt. Add Veggie Blends and stir to combine.
Heat a nonstick pan over medium heat. Add ¼ cup of Veggie Blends and spread into a pancake. Depending on size of pan, repeat with 1-2 additional pancakes. Cook on one side until lightly browned and crispy, 2-3 minutes, flip and cook other side.
Remove from pan, sprinkle with 2 Tbsp. black beans and sprinkle with 1 Tbsp. shredded cheese. Microwave for 30 seconds.
To serve, arrange toppings on top of melted cheese. Makes 6-8 pancakes.
