Easy Spanakopita

Ingredients

  • 2 – 8 oz. pkgs. Green Giant® Chopped Spinach
  • 8 oz. feta cheese, crumbled
  • ½ yellow onion, minced
  • 2 cloves garlic, minced
  • 3 eggs, divided
  • 2 tsp. dill
  • ¼ tsp. coarse salt
  • ¼ tsp. black pepper
  • 1/8 tsp. freshly grated nutmeg
  • 1 sheet frozen puff pastry, thawed

Directions

  1. Preheat oven to 400°F and spray a muffin tin with no-stick spray; set aside.
  2. Cook both boxes of spinach as directed.
  3. Allow to cool enough to handle, then drain well by placing in a colander and pressing with the back of a large spoon.
  4. Add the drained spinach, feta, onion, garlic, 2 eggs, dill, salt, pepper and nutmeg to a large bowl and mix well.
  5. Cut the thawed puff pastry into 9 pieces.
  6. Use a rolling pin to roll each piece to approximately a 4-inch square.
  7. Place the squares in the prepared pan. Gently push them down and up the sides of the muffin tin.
  8. Divide the mixture among the puff pastry squares, filling each one generously.
  9. Whisk the remaining egg and brush it on the exposed edges of puff pastry and the tops of the filling.
  10. Bake for 30 minutes or until golden.
