Ingredients

- 2 – 8 oz. pkgs. Green Giant® Chopped Spinach
- 8 oz. feta cheese, crumbled
- ½ yellow onion, minced
- 2 cloves garlic, minced
- 3 eggs, divided
- 2 tsp. dill
- ¼ tsp. coarse salt
- ¼ tsp. black pepper
- 1/8 tsp. freshly grated nutmeg
- 1 sheet frozen puff pastry, thawed
Directions
- Preheat oven to 400°F and spray a muffin tin with no-stick spray; set aside.
- Cook both boxes of spinach as directed.
- Allow to cool enough to handle, then drain well by placing in a colander and pressing with the back of a large spoon.
- Add the drained spinach, feta, onion, garlic, 2 eggs, dill, salt, pepper and nutmeg to a large bowl and mix well.
- Cut the thawed puff pastry into 9 pieces.
- Use a rolling pin to roll each piece to approximately a 4-inch square.
- Place the squares in the prepared pan. Gently push them down and up the sides of the muffin tin.
- Divide the mixture among the puff pastry squares, filling each one generously.
- Whisk the remaining egg and brush it on the exposed edges of puff pastry and the tops of the filling.
- Bake for 30 minutes or until golden.
