Ingredients

- 1 Tbsp. olive oil
- ½ yellow onion, small diced
- ½ red bell pepper, small diced
- 2 cloves garlic, minced
- 8 oz. orzo
- 2 ½ C. reduced sodium chicken broth
- 1 tsp. dried thyme
- ½ tsp. coarse salt
- ¼ tsp. black pepper
- 1 – 8 oz. pkg. Green Giant® Corn & Butter Sauce
- ½ C. shredded sharp Cheddar cheese
- ½ C. shredded Monterey jack cheese
- 1-4 Tbsp. milk, if needed
Directions
- In a large skillet, heat the olive oil over med-high heat.
- Add the onion and bell pepper and cook for 3-5 minutes or until softened.
- Add the garlic and orzo and cook, stirring frequently, for 2-3 minutes or until the orzo starts to brown.
- Add the broth, thyme, salt and pepper. Bring to a boil then reduce heat and simmer for 8-10 minutes, stirring frequently, until the orzo is cooked.
- While the mixture is simmering, prepare the corn as directed on the package.
- When the orzo is done, stir in the corn and cheeses until well blended and melted.
- Add the milk if you want the mixture to be a little creamier.
