Bacon, Egg & Cheese Breakfast Bowls Recipe

INGREDIENTS

1 Tbsp. olive oil

1 (10 oz.) package baby spinach

2 cups grape tomatoes

6 large eggs, lightly beaten

1 package Green Giant® Veggie Tots® Cauliflower Cheese & Bacon, cooked according to package directions

1/2 cup crumbled feta (optional)

DIRECTIONS

Heat olive oil in large nonstick skillet over medium heat and cook spinach 5 minutes or until wilted. Remove and keep warm.

Add tomatoes to same skillet and cook 5 minutes or until beginning to burst, shaking skillet occasionally. Remove and keep warm.

Add eggs to same skillet and cook to desired doneness, stirring occasionally.

Arrange Green Giant® Veggie Tots® Cauliflower Cheese & Bacon in 4 bowls. Divide eggs, spinach and tomato into bowls. Sprinkle with cheese and drizzle with sriracha, if desired.
