  1. Combine Riced Cauliflower, Green Giant Corn, tomatoes, zucchini and red onion in a large bowl.

  2. Stir in remaining ingredients.

  3. Season to taste with salt and cracked black pepper.

  4. Serve immediately or chill until ready to use. Garnish with additional basil and sprinkle with freshly grated Parmesan cheese, if desired.
