- Mexican Street Corn Dip
1 (8 oz.) package cream cheese, softened
1-1/4 cups mayonnaise
1/2 cup crumbled Queso fresco
1/3 cup grated Cojita cheese
1 (11 oz.) can Green Giant® Steam Crisp Mexicorn, drained
3 green onions, chopped (optional)
2 tablespoon chopped fresh cilantro
1 tablespoons lime juice
2 cloves garlic, crushed
1 teaspoon ground cumin
1 package of Green Giant® Veggie Tots®, cooked according to package directions
Preheat oven to 375°F. Combine all ingredients except Veggie Tots. Turn into a shallow 1-quart baking dish.
Bake 20 minutes or until hot and bubbling. Garnish with additional chopped cilantro and green onion if desired.
Serve with Green Giant® Veggie Tots® or chips for dipping.
