2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons chopped fresh basil
1/2 teaspoon grated lemon zest
1 (12 oz.) package Green Giant® Veggie Spirals® Zucchini, cooked according to package directions, drained and cooled
2 tablespoons shaved Parmesan cheese
2 tablespoons toasted pine nuts (optional)
Combine olive oil, lemon juice, basil and lemon zest in large bowl.
Add Green Giant® Veggie Spirals® Zucchini and toss to coat. Season to taste with salt and pepper.
To quickly cool the zucchini spirals, place in a colander and run under cool water. Drain well before using.
Arrange on serving dish and top with Parmesan cheese and pine nuts.
