Ingredients

FOR THE PEANUT SAUCE
- 1/4 c. smooth peanut butter
- 2 tbsp. rice vinegar
- 1 tsp. soy sauce
- 1 1/2 tsp. sriracha
- 1 tsp. honey or agave
- 1 tsp. sesame oil
- 1 1/2 tbsp. fresh lime juice
- 1 in. piece of ginger, minced
- 1 clove garlic, minced
FOR THE ZOODLES
- 1 pkg. Green Giant® Veggie Spirals® Zucchini
- Kosher salt
- Freshly ground black pepper
- 1/2 lb. chicken tenders sliced thinly (1/4 in thick pieces)
- 1 tbsp. cooking oil
- 1/2 red bell pepper sliced thinly
- 1 med. carrot (use peeler to slice thinly into strips)
- 1/2 c. defrosted edamame beans
- 1/4 c. cilantro leaves
- 1/2 jalapeño thinly sliced
- 1/4 c. cup chopped peanuts
Directions
- Whisk sauce together and set aside.
- Microwave Veggie Spirals 5 min according to package instructions. Press out the water from the Veggie Spirals, drain, and set aside.
- Salt and pepper the sliced chicken.
- Heat a nonstick pan over medium-high heat, add in oil, then sauté chicken until done on both sides (about 5-6 min). Lower heat to medium-low, stir in peppers, carrots, edamame, and sauté for 2 min.
- Turn off heat, immediately add in Veggie Spirals and sauce and stir just until combined. Squeeze a bit more lime juice on top, then serve garnished with cilantro, jalapeños, and peanuts.
