Cauliflower Gnocchi with Pancetta and Peas

The combination of onion, garlic and pancetta in this easy recipe gives this brothy sauce amazing flavor. Simmering the Cauliflower Gnocchi in broth for just a few minutes allows the Gnocchi to soak up all the wonderful flavors. You may want to eat this dish with a spoon to be sure to get every drop.”

INGREDIENTS

1 tablespoon olive oil

1 small onion, chopped

4 oz. diced pancetta, ham or prosciutto (about 1/2 cup)

2 cloves garlic, sliced

1/2 cup chicken broth

1 cup Green Giant® Frozen Peas, thawed

1 package Green Giant® Cauliflower Gnocchi

DIRECTIONS

Heat olive oil in nonstick skillet over medium heat and cook onion 4 minutes, or until tender. Add pancetta and garlic and cook 4 minutes or until pancetta begins to brown. Add chicken broth and peas and simmer 5 minutes.

Meanwhile, cook Green Giant® Cauliflower Gnocchi according to package directions; drain well.

Immediately add Gnocchi to skillet and cook 3 minutes stirring frequently.
