Broccoli Cheddar Chaffles

Great-tasting, cheesy and fun! These keto-friendly chaffles can be used in place of bread, or served as savory breakfast.

  1. Spray a mini waffle iron (or a standard waffle iron) with cooking spray and preheat.

  2. Prepare Veggie Blends as directed.

  3. Whisk eggs in a medium bowl. Add cheese and salt.

  4. Remove Veggie Blends from microwave, carefully open and pour into the bowl with egg/cheese mixture, stirring to combine.

  5. Add about ¼ cup batter to waffle iron and cook until nicely browned and crispy, about 4-5 minutes.

  6. Serve just as they are, or use as “bread” and make a BLT – spread 2 chaffles with mayo and fill with crisp bacon, lettuce leaves, fresh tomatoes and a sprinkle of salt and freshly ground pepper.
