Corn Stuffed Avocados Recipe

INGREDIENTS

1 (9.5 oz.) pkg. Green Giant® Southwest Style Street Corn
1/2 cup cherry tomatoes, quartered
1 Tbsp. chopped cilantro
Juice from 1/2 lime
2 avocados
4 Tbsp. cotija or feta cheese
Salt and pepper
Lime wedges, for serving

DIRECTIONS

Prepare Southwest Style Street Corn as directed on pack.
Pour contents into a medium bowl and add chopped tomato, cilantro and lime juice.
Cut each avocado into quarters (removing pit) and arrange two quarters on each plate. Evenly distribute corn mixture between all four plates. Sprinkle each serving with cheese, salt and pepper and serve with lime wedges.
