Ingredients

- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon grated lemon zest
- 1 (12 oz.) package Green Giant® Veggie Spirals® Zucchini, cooked according to package directions, drained and cooled
- 2 tablespoons shaved Parmesan cheese
- 2 tablespoons toasted pine nuts (optional)
Directions
- Combine olive oil, lemon juice, basil and lemon zest in large bowl.
- Add Green Giant® Veggie Spirals® Zucchini and toss to coat. Season to taste with salt and pepper.
- To quickly cool the zucchini spirals, place in a colander and run under cool water. Drain well before using.
- Arrange on serving dish and top with Parmesan cheese and pine nuts.
